Chicken

1 cup thinly sliced leek
1 cup ruby port
¾ cup dried cherries
¾ cup kalamata olives (pitted)
1/3 cup fresh orange juice
1 teaspoon paprika
1 teaspoon crushed red pepper
4 thyme sprigs
1 cinnamon stick
1½ teaspoons salt
3½ lbs. turkey thighs skinned or chicken
1 tablespoon ground cumin

Combine first 9 ingredients in crock pot.
Add ½ teaspoon salt.
Rinse turkey, pat dry.
Sprinkle with remaining salt and cumin.
Add to crock pot.
Cook, covered, on high for 1 hour.
Lower heat to low.
Cook for 4 hours (or less, mine turned out a bit on the dry side at 3½ hours)

Serve with mashed potatoes or couscous.
